This enemy is a bird being possessed by a ghost pig. They have pig features like tail, ears snout and stuff, but they are the colour the bird (Depending on host's colour) Like if the Pig was possessing a black bird the pig would be black.
When defeated the Ghost Pig will go away and depending on what bird it is possessing it will line up for the slingshot. They are Pretty rare and award 7000 points. In gallery we have a pigified Zombie bird, A pigified Electric Bird and a Pigified Golden Bird
